Kesar peda with khoya/khova recipe is a classic Indian mithai (Indian sweet) that is prepared across the country during various occasions.Kesar peda is a milk sweet prepared with homemade khova (milk solids) and sugar,with kesar (saffron) adding delicate flavor and color.It is one of the labor intensive recipe but a very simple one.All you need to make this kesar peda is time and more time (if you want to prepare it at home from scratch). The main time consuming process in this famous Indian sweet is the preparation of khova/khoya. You need to stir,stir and more stir the whole milk till it looses all its water content and becomes khova. You can of course get ready made khova,but home made is always better and I will never recommend to buy such dairy products,as preparing them is as simple as boiling milk.I have already blogged an easy dhoodh peda recipe here,the one using condensed milk and milk powder,while that is a soft sticky fudge kind of sweet,the one I am blogging now is a true classic Indian sweet with the whole goodness of milk and only milk.It is soft,a little bit grainy and that texture is what makes this kesar peda awesome.This homemade peda is nothing like you get in sweet shops,these are not rock solid,dense and powdery.We are not using any flour,thickening agent here,so these kesar pedas are pure homemade bliss.To make the work easier,you can split it like I did.I prepared the khova the day before I prepared the actual pedas.One more thing you can do is,you can set the milk for boiling along with your morning cooking and keep an eye stirring at regular intervals.If you use a thick bottomed vessel (non stick is not mandatory,I used a heavy pressure cooker),making khova is non messy and easy.Once you get hold of khova,this kesar peda can be prepared in 15 minutes,yeah that’s it,but the yield you will get from 1lr milk is mere 10 pedas :( and they will be gone in no time.
