almond butter and banana open sandwichThis is my interpretation of a peanut butter and banana sandwich. Not bad, if I dare say so. Not bad at all. Actually, it tastes pretty damn fantastic!
almond butter and banana open sandwichI replaced the peanut butter with almond butter simply because I love it so much better. And I skipped the bread altogether. Not because I don’t love bread. Because I do (I actually made few tiny wholemeal breads today). I simply wanted a simple, small, early snack, enough to power my morning and my run and give my body nutritious goodness for muscles, bones and all the other tiny cells working 24/7.

Ingredients
  • 1 big banana
  • 2 TBSP almond butter
  • 1 TBSP raw honey/agave/maple syrup
  • 1 TBSP tahini
  • Toppings of choice: walnuts, raisins, almond flakes, sesame, chia seeds
Instructions
  1. Slice your banana lengthwise.
  2. Mix almond butter with tahini and sweetener of choice.
  3. Layer it all up!
  4. Enjoy.
  5. Be happy.
